Blackbean Quesadilla
Ingredients
- 400g canned black beans
- 1 brown onion diced
- 1 tsp minced garlic
- 2 tsp chipotle in adobo (available in the Mexican section of the supermarket)
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1/2 tsp sea salt
- 4 small soft tortilla wraps
- 2 tbspn kewpie mayo
- fire roasted capsicum (store bought works great)
- 100g shredded orange cheese or mozarella
Method
- Sautee onion until translucent, add garlic and spices for a minute then add chipotle and black beans. Sautee until mixed thoroughly. Set aside.
- Start to assemble your quesadilla.
- I used mayo on the base of the tortillas, then add the bean mix, fire roasted capsicum, orange cheese and mozzarella.
- Pan fry until all the cheese has melted
- Serve with an avocado salsa and sour cream and enjoy!
