Mediterranean Orange Custard

Ingredients:

- 2 cups whipping cream
- 1 cup milk
- ½ cup sugar (1/4 cup in the custard, ¼ for
caramel)
- 3 eggs
- 2 egg yolks
- ½ cup orange juice
- rind of 1 orange
- 1 T rose water

1.

Set Oven to 170c

Heat cream, milk, rind of 1 orange, sugar + bringto near boil.

3.

Whisk eggs with ½ sugar + rosewater

4.

Pour milk onto eggs, strain and pour into bowls.

5.

Cook 30 min in water bath in the oven.

6.

Cool. Place a slice of skinned orange on top.

7.

Caramelise remaining sugar and when dark take off heat. Then stir through orange juice when cool pour on top of custard.
